Salmon with honey and dill sauce

Ingredients (serves 4)

Salmon

  • Water 1 l
  • Sea salt 80 g
  • Salmon 600 g
  • Broccoli 1 pcs.
  • Carrot 300 g
  • Green peas (fresh or frozen) 400 g
  • Sugar 10 g

Honey and dill sauce

  • Flower honey 3 tbsp
  • Creamy mustard 3 tbsp
  • Olive oil 80 ml
  • Warm water 50 ml
  • Dill bunch ½ pcs.
  • French wholegrain mustard 1 tbsp

Method:

Honey and dill sauce

  • Combine honey with creamy mustard, olive oil and water.
  • Then add chopped dill, wholegrain French mustard, mix and season to taste.

Salmon

  • Prepare brine from water and salt. Let the fish soak in it for 15 minutes. Then take it out and dry it with a paper towel.
  • Wash the vegetables, divide the broccoli into florets, cut carrots into batonettes, rinse the peas under running water.
  • Place the salmon on a baking tray and add vegetables (laid out flat).
  • Steam in the oven on the Steaming / P01S cycle for 12-15 minutes, depending on the size of the fish.
  • After removing the dish from the oven, arrange the vegetables on a plate with the fish and sauce on top.
