Ingredients (serves 4)
Salmon
- Water 1 l
- Sea salt 80 g
- Salmon 600 g
- Broccoli 1 pcs.
- Carrot 300 g
- Green peas (fresh or frozen) 400 g
- Sugar 10 g
Honey and dill sauce
- Flower honey 3 tbsp
- Creamy mustard 3 tbsp
- Olive oil 80 ml
- Warm water 50 ml
- Dill bunch ½ pcs.
- French wholegrain mustard 1 tbsp
Method:
Honey and dill sauce
- Combine honey with creamy mustard, olive oil and water.
- Then add chopped dill, wholegrain French mustard, mix and season to taste.
Salmon
- Prepare brine from water and salt. Let the fish soak in it for 15 minutes. Then take it out and dry it with a paper towel.
- Wash the vegetables, divide the broccoli into florets, cut carrots into batonettes, rinse the peas under running water.
- Place the salmon on a baking tray and add vegetables (laid out flat).
- Steam in the oven on the Steaming / P01S cycle for 12-15 minutes, depending on the size of the fish.
- After removing the dish from the oven, arrange the vegetables on a plate with the fish and sauce on top.
