FIT Cod en papillote with vegetables

Ingredients (serves 4)

  • Cod fillets 4 pcs.
  • Fennel ½ pcs.
  • Garlic cloves 2 pcs.
  • Onion ½ pcs.
  • Jacket potatoes 4 pcs.
  • Salt, pepper, rosemary to taste
  • Butter 2 tbsp
  • Lemon ¼ pcs.


  • Cut the cod into portions and check for bones.
  • Slice vegetables, cut potatoes into quarters.
  • Form a papillote from the baking paper. Put the cod, and sliced vegetables inside, sprinkle with salt, pepper, add rosemary, butter and two lemon slices in each papillote.
  • Roast in a half-open papillote on the Steaming + Grill / P02S cycle for 20 minutes.
  • Once roasted, serve warm with bread.

Chef's suggestion:

Roasting with simultaneous steaming at low temperatures, will keep the moisture in the fish, especially if the processing time is quite long. In this way, all the fish juices will form a delicious sauce in the papillote.
