Juicy sous vide pork roast

Ingredients (serves 4)

  • Pork ham 1.5 kg
  • Spice mix 2 tbsp
  • Olive oil or butter 4 tbsp
  • Salt, pepper to taste
  • Cranberry/lingonberry for garnish


  • Marinate the meat in your favorite spices and oil. Set aside in the refrigerator preferably for 24 hours.
  • Put the meat in a cooking sleeve and roast at 80°C for 4 hours on Pork in low temperature / P04S cycle.
  • Once ready, serve with cranberries or sweet sauce.

Chef's suggestion:

Roasting in a sleeve at a low temperature is just like the sous vide cooking method which allows to keep the moisture in the meat. Adding your favorite herbs such as rosemary, thyme or bay leaf will intensify its aroma. Natural fat is a carrier of flavor. Add a little butter to the dish before roasting. Once cooled, the meat is perfect for sandwiches.
