Ingredients (serves 4)
- Pork ribs 1.5 kg
Homemade BBQ sauce
- Fresh tomatoes or canned
- chopped tomatoes 200 g
- Ketchup 150 g
- Brown sugar 100 g
- Cider vinegar 50 ml
- Honey 50 g
- Smoked paprika 1 tbsp
- Salt 1 tbsp
- Black pepper ½ tsp
- Chili ½ tsp
- Granulated garlic ½ tsp
- Granulated onion ½ tsp
- Mustard to taste (optionally)
Method:
BBQ sauce
- Combine all sauce ingredients in a pot.
- Bring to a boil and cook over low heat for about 20 minutes, let it cool.
- You can store the sauce in the refrigerator for up to 2 weeks.
Meat
- Roasting with steam/ P09S cycle for 120 min is recommended.
- Marinate the ribs in your BBQ sauce or use ready-made sauce. Set aside in the refrigerator preferably for 24 hours.
- Put the ribs together with the marinade into a roasting sleeve and roast for about 120 minutes on the Roasting with steam / P09S cycle.
- 20 minutes before the end of cooking, open the sleeve to caramelize the ribs.
- Serve hot with sauce and chips.
Chef's suggestion:
Roasting with simultaneous steaming at low temperatures does not dry out the meat. The homemade BBQ sauce, once cooled, is great for barbecuing during the summer season.
