Tomato soup in 30 minutes

Ingredients (serves: 2)

  • Ripe tomatoes, peeled and cut into quarters 1kg
  • Onion 1 pcs.
  • Garlic cloves 2 pcs.
  • Live oil 2 tbsp
  • Dried basil 1 tsp
  • Dried oregano 1 tsp
  • Sugar 1 tsp
  • Salt and pepper to taste
  • Vegetable stock 4 cups
  • fresh basil leaves to garnish


  • Turn on the Simmer cycle (90°) on your Amica induction hob.
  • Add olive oil, chopped onion, garlic and fry in a heated pot until onion is glazed and garlic releases its aroma.
  • Add tomatoes, dried basil, dried oregano, sugar, salt and pepper.
  • Cook for about 10-15 minutes until the tomatoes have softened and released their juice.
  • Pour in vegetable stock and cook for a further 10 minutes to allow the flavours to combine.
  • Allow the soup to cool and then blend to a smooth cream.


Serve tomato soup hot, garnished with fresh basil leaves.
