Ingredients (serves: 2)
- Ripe tomatoes, peeled and cut into quarters 1kg
- Onion 1 pcs.
- Garlic cloves 2 pcs.
- Live oil 2 tbsp
- Dried basil 1 tsp
- Dried oregano 1 tsp
- Sugar 1 tsp
- Salt and pepper to taste
- Vegetable stock 4 cups
- fresh basil leaves to garnish
Method:
- Turn on the Simmer cycle (90°) on your Amica induction hob.
- Add olive oil, chopped onion, garlic and fry in a heated pot until onion is glazed and garlic releases its aroma.
- Add tomatoes, dried basil, dried oregano, sugar, salt and pepper.
- Cook for about 10-15 minutes until the tomatoes have softened and released their juice.
- Pour in vegetable stock and cook for a further 10 minutes to allow the flavours to combine.
- Allow the soup to cool and then blend to a smooth cream.
Serving:
Serve tomato soup hot, garnished with fresh basil leaves.
