Ingredients (serves: 4)
- Onion 1 pcs.
- Garlic cloves 3 pcs.
- Chilli pepper 1 pcs.
- Large pepper 1 pcs.
- Sweet potatoes 0.5 kg
- Red beans ½ can
- Cooked chickpeas ½ can
- Vegetable stock 500 ml
- Chopped tomatoes 1 can
- Coconut milk 1 can
- a pinch of curry
- parsley and parmesan to garnish
Method:
- Turn on Stewing cycle (70°C) on your Amica induction hob
- Pour olive oil into a saucepan, then add chopped sweet potatoes, peppers, onion, garlic and chili.
- Fry the ingredients and then add tinned tomatoes, chickpeas and stir.
- At the end, add red beans, coconut milk, stock and a pinch of curry.
- Season by adding salt and pepper.
- Simmer the stew for 25 minutes.
Serving:
Garnish with parsley and grated parmesan, serve in bowls.
